I must admit the only time I miss my home state of New South Wales is during the autumn. I miss the dramatic changes in season. Queensland really doesn’t have the dramatic colours. But I have to admit I really enjoy not having to bundle up the whole day. It gets cool here I mean -1c is -1c whether Queensland or New South Wales but it doesn’t stay that long.
My daughters look at me blankly as I tell them of fog that rolls out at 11am only to roll back in at 3pm. Of having to wear thermal underwear, skivvies, jumpers and jackets, beanies, gloves and scarves just to not freeze. In a few weeks they will get to experience it though as we are making our yearly pilgrimage down to NSW. This time the girls are coming with us so it will be good for them to see and experience it all.
By then our baby birds will be old enough to go to their new homes

in fact I wouldn’t be surprised if the older ones start flying any moment now. I baked welshcakes the otehr day.
I made quite a lot (there is only some pictured there) and I left the out to cool. When K came home I slipped out to get some groceries because I have had sick girls at home and unable to get the food. Well I came home to find 3 left. That was it 3. So much for using them for school. Ah well they were well received and I will be making them again. It is an easy recipe and don’t take long to cook.
240g SR flour
pinch salt
1/2 tspn mixed spice
120g butter
60g sugar
120g currants (sultanas are good too)
1 egg
milk
sift the flour, salt and mixed spice together ina large bowl and add the butter till it looks like breadcrumbs. stir in sugar and currants add eggs and a little milk till it becomes a smooth dough. Roll out on a floured board till 1/4cm thickness. cut into rounds and cook in a greased (spray oil) frypan till golden brown each side.
They are wonderful hot, cold, plain or with butter on them. Enjoy.
I also baked savoury biscuits and made cordial.
It was made with frozen bought berries. It turned out well and the girls have enjoyed taste testing it. It is a little tangier then normal. Not unpleasant just different.
Now I have to conquer the yogo. My daughters love chocolate yogo and we buy one a week. I have attempted to make this twice before. One batch didn’t have enough sugar and the second batch didn’t set. I am determined to win this battle.





LOL at there only being 3 left when you came home. Your cordial looks yum. Hmm..Just might have ago at making Yogo myself…thanks for the idea.

Frustrating though it is to see them all gone, it’s nice when your baking is well received! I can’t imagine Australia being cold – we have an idea here in the UK that all you get is sunshine. Wish I lived near you to have one of those baby conures!

p.s. what’s yogo? yoghurt?
Yogo is like chocolate pudding it is small single serve containers and my girls adore it. It is more like the consistency of yoghurt then mousse though. Those little birds are really gorgeous especially the little blue one. Pity I can’t send you one.
